  • Oat flour: 1–1½ cups (or blend your own oats for a more grounding, rustic texture)
  • Ground flaxseed: 2–3 tbsp
  • Chia seeds: 1–2 tbsp
  • Psyllium husk: 0–1 tbsp (for structure + fiber)
  • Olive oil: 1–2 tbsp
  • Apple cider vinegar: 1 tbsp
  • Baking powder: 1 tsp
  • Baking soda: ½ tsp
  • Salt: ¼–½ tsp
  • Shredded cheese: 0–¼ cup (richness + protein)
  • Everything seasoning or herbs: 0–2 tsp
  • Pumpkin or sunflower seeds: 0–2 tbsp (texture + visual appeal)

INSTRUCTIONS

  1. Preheat oven to 350°F and line a small loaf pan with parchment
  2. Blend cottage cheese and eggs until smooth
  3. In a bowl, mix all dry ingredients (oat flour, flaxseed, chia, psyllium, baking powder, baking soda, salt)
  4. Add the blended mixture, olive oil, and apple cider vinegar to the dry ingredients and stir until combined
  5. Let the batter rest for 5–10 minutes to allow the fibers to absorb
  6. Transfer to the loaf pan and gently smooth the top
  7. Optional: lightly score the top or sprinkle seeds for texture
  8. Bake for 30–40 minutes until golden and set in the center
