INGREDIENTS

  • Broccoli: 1 medium head, chopped
  • Cauliflower: 1 medium head, chopped
  • Apple: 1, chopped
  • Red onion: ¼–1 small, finely diced
  • Sharp cheddar cheese: ~3 oz, cubed
  • Sunflower seeds: 1–3 tbsp
  • Dried cranberries: 2 tbsp–¼ cup

INSTRUCTIONS

  1. Combine all ingredients in a large bowl
  2. Add the dressing and gently mix until evenly coated
  3. Refrigerate for 30–60 minutes, then enjoy

DRESSING

  • Greek yogurt: ~3–6 oz
  • Mayo: 0–2 tbsp
  • Olive oil: 1–2 tbsp
  • Apple cider vinegar: 1–3 tbsp
  • Lemon juice: 1–2 tbsp
  • Maple syrup: 1–2 tbsp
  • Dijon mustard: ~1 tsp
  • Salt: to taste
  • Pepper: to taste
